bbq chicken sliders

last night for dinner we had bbq chicken sliders.  they are adapted from a barbecue chicken burger recipe i found on one of my favorite blogs, annie’s eats.  i had to change up the recipe a little since i just used what i already had in my kitchen but they are really juicy and flavorful!!!  i made them into sliders because i just used chicken breast (rather than ground chicken, which is usually a mix of white and dark meat) and i was worried they would dry out if i made them into full sized burgers.  i also just kind of love the idea of sliders cause they are so cute!  but next time i have to remember to make the burgers just a little bigger since this time, i had to use 2 super mini burgers for each slider.  fail.

here are a few additional tips that worked for me:

#1 we didn’t have ground chicken.  so i just put the cubed chicken breast (along with the rest of the ingredients) into the food processor and pulsed it until it looked like ground chicken and everything was mixed nicely.

  

#2  since we don’t have an outside grill, i just used our grill pan and it worked out great!

  

 #3 i recently bought these awesome snapware containers from costco and the rectangle one with 2 compartments is perfect for packing up these sliders for lunch.  how cute!

yeast rolls in an hour

when i first saw this recipe on another blog, i was a bit skeptical.  i mean, yeast rolls in an hour?  that’s crazy!  usually it takes 2-3 hours to make yeast bread.  but i was really hoping this would work because it would be nice to be able to make rolls for dinner after work.  so the night before last, i decided to test it out.  oh and i made whole wheat rolls it make them just a tad bit healthier and halved the recipe because we only needed 12 rolls.  

at 9:10 p.m. i started making the dough and by 10:18 p.m. the rolls were out of the oven cooling.  sadly i guess it was more like “yeast rolls in an hour + 8 minutes” but still it’s awesome to know that i can make rolls in about an hour.  yay!!!

we used the rolls for our bbq chicken sliders that we had for dinner last night.  recipe coming soon…
