buffalo chicken quinoa bites

this is actually the second quinoa recipe that i made but some how i kept forgetting to write a post about it.  i don’t know how i kept forgetting though because these buffalo chicken quinoa bites were the bomb diggity.  to be honest you can’t even tell that there is anything remotely healthy about these bites.  the flavor of the buffalo sauce and blue cheese shine through and you get all the of healthy benefits of quinoa without even knowing it.

the outsides of the bites get nice and crispy while the inside, stays soft and fluffy – the perfect combination.  they magically pack a ton of flavor in just a small, bite sized nugget.  served with some blue cheese dressing they would make a great appetizer.

but i made these to pack up for lunch.  i just divided them up about 4-5 per a serving along with some veggies and light blue cheese dressing.  they microwaved wonderfully and they were surprisingly light yet filling.

to whip these bad boys up, start by combining all of the ingredients in a large bowl.  there’s shredded chicken, cooked quinoa, an egg, panko breadcrumbs, buffalo sauce, blue cheese, mozzarella cheese, onion and green onion.

mix everything together…

then divide the mixture among 24 mini muffin cups.  press the mixture down so it’s packed in there. this is important because otherwise the bites will just fall apart.

bake at 350 degrees F for 25-30 minutes.

taking the bites out of the pan can be a little difficult, but i found running a thin paring knife around the edge of each bite helps them pop out of the pan more easily.  serve them with some blue cheese or ranch dressing and you’re done!

Buffalo Chicken Quinoa Bites

  • 1 cup cooked quinoa
  • 1 large egg
  • 1/4 cup onion, finely chopped
  • 1/4 cup green onions, chopped
  • 1 cup finely chopped cooked chicken
  • 1/4 cup buffalo sauce (I used Frank’s)
  • 1/2 cup shredded mozzarella cheese
  • 1/2 cup panko bread crumbs
  • 1/4 cup blue cheese
  • 1/2 tsp minced garlic
  • salt and pepper to taste


  1. Preheat oven to 350 degrees.
  2. Mix together all ingredients.
  3. Distribute mixture into a greased mini muffin tin, filling each cup to the top (1 heaping Tbs each), and press down gently to compact.
  4. Bake for 25-30 minutes.
  5. Serve warm with blue cheese or ranch dressing.

    These look amazing! Is there anything you would recommend in place of the blue cheese (for those of us who do not like it)?

    • hi katie! you could just leave the blue cheese out or add more mozzarella instead. hope you like them!

    Just wondering if you used the panko for a binding agent and if I could use oats in place from a gluten-free aspect. They look delish and going to try them soon!

    • hi stephanie!!! yeah the panko just helps keep the quinoa mixture together. i would guess oats would work just fine. let me know how it goes. hope you like it!

    They came out awesome! Just added 2 medium eggs and a handful of oats. I also made some with homemade BBQ sauce and they were good. The buffalo chicken ones were incredible! Served them w/homemade ranch. My husband gobbled down 10 himself! Thank you.

    Using spark people. Com receipe calculator, stats approx as follows; assuming 5 servings from total batch.
    286 cal, 12g fat, 6g sat fat, 92 g cholesterol, 797g sodium, 22g carbs, 2g fiber, 23g protein. Good source of vit A calcium and iron.
    If you swap in .25 egg sub, use low fat blue cheese and only 2 tablespoons, and use a low fat shredded cheese, you can reduce cal to 226, cut fat in half to 6g, and chokesterol to 40g, Sodium still high @ 667g per serving (blue and buffalo sauce will do that). 21g carb, 2g fiber, 22 g protein.
    I really want to make this, will tweak further for fat savings

    New to quinoa …. Do you mean cook one cup of raw quinoa and then use that large amount …or cook some quinoa and then scoop out one cup of the finished quinoa? Thanks

    • hi jenny! the later – cook some quinoa and then measure 1 cup of the cooked quinoa. hope you like it!

    What do you suggest in lieu of chicken? Trying to make this without meat.

    • you can actually just use an equal amount of additional quinoa instead of the chicken. i’ve made it this way multiple times and they turn out great!

  9. Hi – I’m diving headlong into freezer meal cooking and was curious to know if these freeze well.

    • hi cathy! unfortunately i haven’t froze these bites before so i’m not sure. i could see them ending up a bit crumbly after freezing since freezing tends to dry food out. but it would probably still taste good. if you give it a try, please report back. 🙂 thanks!
