honey teriyaki chicken

i found this recipe on pinterest and it was originally called crockpot bourbon chicken.  it’s supposed to be a homemade version of the bourbon chicken that you can often find  at cajun/chinese restaurants in mall food courts.  well then the name was switched to crockpot honey sesame chicken because there was a lot of confusion about why there isn’t any boubon in the recipe.  it’s actually just named after bourbon street in new orleans.

well after making this chicken, i decided that it actually didn’t really taste like the bourbon chicken at the food court and didn’t really taste very sesame-y (there really is just some sesame seeds sprinkled on).  instead just takes like teryiaki chicken with a strong honey flavor.  so now i’m going to call this honey teriyaki chicken – which i think best reflects what this chicken actually is.

still regardless of what you call it, this chicken is absolutely scrumptious!  plus it’s super easy to make since all you gotta do is throw everything into a crockpot, turn it on, wait a few hours, and it’s done. oh one thing though, there was a ton of sauce left over so i changed the recipe below and halved the amount of sauce called for in the original recipe.  you could also just use the original recipe but double the amount of chicken, then you will have lots of leftovers which really isn’t the worst thing in the world 😉

first salt and pepper the boneless chicken thighs and then put them in the crockpot.

mix up the sauce by combining the soy sauce, honey, ketchup, chopped onions, vegetable oil, minced garlic, and red pepper flakes in a small bowl.

pour the sauce over the chicken.

set the crockpot to low and cook for 3-4 hours or high for 1 1/2 – 2 hours.  as you can see there is a lot of oil/fat that came out of the chicken, so i skimmed the fat off and then discarded it.

take the chicken out of the sauce and slice it into pieces.

now to thicken the sauce, mix some cornstarch with a little water in a small bowl (or measuring cup).  stir the cornstarch water mixture into the sauce and cook for a few minutes until the sauce is thickened.

put the sliced chicken back into the pot and stir to make sure all the chicken is generously covered with the sauce.

finally, serve the chicken on a bed of rice and garnish with some toasted sesame seed and chopped green onions.  yum!

Honey Teriyaki Chicken

adapted slightly from Table for Two

Ingredients

  • 1 lb. boneless, skinless chicken thighs, about 5
  • Salt and pepper
  • 1/2 cup of honey
  • 1/4 cup of low sodium soy sauce
  • 2 tbsp. ketchup
  • 1 tbsp. vegetable oil
  • 2 cloves of garlic, minced
  • 1/4 cup diced onion
  • 1/4 tsp. red pepper flakes
  • Cornstarch
  • Sesame seeds and chopped green onions, for garnish

Directions

  1. Place the chicken thighs in the crockpot insert and sprinkle salt and pepper on both sides.
  2. In a medium sized bowl, combine honey, soy sauce, ketchup, oil, garlic, onion, and red pepper flakes. Stir to combine well. Pour over the chicken in the crockpot.
  3. Cook on low for 3-4 hours or high for 1 1/2-2 1/2 hours.
  4. When done, skim some of the fat/oil off the sauce and discard.   Remove chicken from stock pot and cut into chunks. Prior to putting the chicken back in the stockpot, combine some cornstarch in water and whisk it into the crockpot to thicken up the sauce a bit. Throw the chicken back in and stir around to recoat the chicken in the sauce.
  5. Serve hot over a bed of white rice (optional) and sprinkle some sesame seeds and chopped green onions on top.
