salted caramel brownie cookies

doesn’t this just look like a regular ol’ chocolate cookie.  nothing too special right?  well, just wait until you bite into this cookie and find…

ooey gooey caramel with a slight touch of saltiness hidden in this soft, chewy brownie cookie.  sounds good huh?  but what’s even better is that this cookie is super easy to make.  in fact you actually use a box of brownie mix to make these cookie.  awesome!

then you stuff the cookie dough with some caramel and just a sprinkling of salt.  the original recipe calls for caramel squares, but i happened to have a bag of caramel bits in my pantry so i decided to use those instead.  though it worked out okay, i would actually suggest using the caramel squares instead.  the bits spread throughout the cookie but the square would give you a more prominent caramel bite in the middle of the cookie which i think would be better.

oh well, lesson learned… oh and one more tip.  these cookies got a bit hard just a couple days after baking them.  this was quite unfortunate because i was mailing them to a few friends and family members.  but there is a solution:  just microwave the cookies for 10-15 seconds and they return to their soft, chewy, gooey selves.  phew!

let’s make some salted caramel brownie cookies!  first, just mix it together with some oil, water, and eggs and your cookie dough is ready.

  

now comes the fun part.  we’re going to stuff the dough with caramel and a little bit of salt.  start with a teaspoon of dough.

then press a caramel square or 3 or 4 caramel bits in the center of the cookie and sprinkle on a little kosher or sea salt.

take another teaspoon scoop of cookie dough and flatten it out slightly.  place it on top of the caramel and then gently spread it over the caramel so that its completely covered.

  

now they are ready to bake.

okay this is important – make sure to allow these cookies to cool on the baking sheet for 5 minutes.  if you don’t, the caramel will just start seeping out of the bottom of the cookie.  not good.  then don’t allow them to cool on a baking rack, instead just place them on a sheet of wax paper until they are completely cooled.

    • haha. they were definitely the best still warm, fresh after baking. if i wasn’t planning on sending them away, i probably would have gobbled them up really quickly. 🙂

  3. You know what’s crazy cool? I mean, besides these AMAZING cookies, of course. Lauren from LL actually mailed me a dozen of her vanilla bean sugar cookies last Christmas!! I *wish* it was b/c I’m all famous or special or something but it was just that we were both participating in the Great Blogger Cookie Swap and she happened to get me as one of her swappees. I’ve been following her blog ever since and I pinned this recipe and already forgot about it until I saw you did it! Thanks for the tip on microwaving–I hope to make these eventually.
