chocolate peppermint sandwich cookies

i know, i know.  this is totally a christmas cookie.  i’m a bit behind in posting after our trip home to hawaii, so this recipe is actually from the holiday treats that i made some of my friends for christmas.  although these chocolate peppermint sandwich cookies look very christmasy, i think without the crushed candy canes they are a great treat anytime of the year.  you could also omit the peppermint extract in the filling and make some homemade oreos. 🙂

i especially like the chocolate cookies that make up these sandwich cookies.  they are soft and chewy and chocolatey.  awesome!  the cookies start off a little unconventionally.  in a medium saucepan, melt the chocolate chips, butter, brown sugar, etc.


then pour the chocolate mixture into the bowl of a stand mixer and add in the flour mixture of flour, baking soda, salt, etc.

mix until just combined.  the dough is going to be very very soft.  don’t freak out.  it’s supposed to be this way.  just put it into the fridge for a few minutes to set and the dough will be easy to work with.

now just scoop out the dough into 2 tsp. balls and bake for just 7-8 minutes.  they won’t look completely baked but that’s what makes the cookies so soft and chewy.

match up the cookies and fill up the pairs of cookies with the peppermint filling.  finally, decorate the cookies with crushed candy canes or sprinkles.
