homemade three cheese tortellini

i’ve been wanting to make fresh pasta for a while and since we have a kitchen aid i was looking at getting the pasta attachment for it.  sadly they are much more expensive than i had thought and didn’t feel like investing in them quite yet.  since i made gyoza wrappers last weekend,  i figured i could make fresh pasta the same way too.  i decided to make homemade tortellini with three cheese filling.  well, after this adventure i learned that making gyoza with homemade wrappers is much easier than making homemade tortellini.  the dough was a bit harder to work with than the gyoza wrapper dough and i now understand why people just buy pasta makers.  though they were really good, they aren’t quite worth the effort.  next time, i’ll just go to the grocery store…
