this weekend my boyfriend and i went out to dinner at ted’s. they have super yummy buffalo burgers. but what actually caught our eye was the apple crisp dessert they had on their menu. well, after eating one of their HUGE burgers you definitely don’t have room for dessert. so i decided to make apple crisp for breakfast the next day. but the only apple crisp recipes i found were really sweet and rich, not something you would exactly want to eat in the morning. but then i found a recipe on one of my favorite blogs, smitten kitchen for a breakfast apple granola crisp. perfect!
well actually at first i didn’t really like it. the apples were really tart so the crisp was pretty sour. yuck. plus the apples didn’t cook quite evenly, the ones on the bottom were like apple sauce and the ones further to the top were still crunchy. but then i ate some again the next morning and it was delicious. the secret is to just mix it all up and it turns into a great apple oatmeal kind of breakfast. yummy! i’ve been eating it for breakfast these past couple of days and i’m not sick of it yet. a good sign of a good breakfast. yay!
Breakfast Apple Granola Crisp

- 3 pounds granny smith apples or mix of apples, you like to bake with, peeled, cored and sliced
- 2 tablespoons lemon or orange juice
- 3 tablespoons brown sugar
- 2 tablespoons cornstarch
- 1 teaspoon cinnamon
- 1 stick (8 tablespoons or 4 ounces) unsalted butter
- 1/4 cup honey
- 1/2 cup flour
- 2 cups oats
- 1/2 cup sliced walnuts
- Preheat oven to 400°F.
- Mix apple chunks with lemon juice, sugar, cornstarch, cinnamon and pinch of salt in a 9×13-inch baking dish until apples are evenly coated.
- In a medium saucepan, melt the butter with the honey.
- Stir in the flour, oats, walnuts and another pinch of salt until clumps form.
- Sprinkle evenly over the apple mixture and bake in the oven for about 45 to 55 minutes, or until the apples are softened and bubbly.
- Should the granola brown before you wish it to, cover the baking dish carefully with foil for all but the last few minutes of baking time, when removing the foil will help the granola recrisp.
- Cool to room temperature and then stash in the fridge to eat with your morning yogurt.
