i love somen salad. it’s definitely a local favorite. my favorite part is the sauce! yummy! plus you can really make it with whatever you happen to have in the fridge. this one had char siu (chinese bbq pork), kamaboko (japanese fish cake), scrambled egg, green onions, and lettuce. but you could also add cold cuts cut into strips, furikake, tempura and much more.
Somen Salad Sauce

- 1 tablespoon vegetable oil
- 2 tablespoons sesame oil
- ½ cup sugar
- ½ cup shoyu
- 1 package dashi no moto
- Place sauce ingredients in bottle and shake well.
Use as sauce for “balls” of somen topped with strips of lettuce, char siu & kamaboko or whatever toppings you like (scrambled egg, ham, tempura…). To make the balls just use a fork and roll the somen into small balls. This is especially helpful for potlucks so guests don’t have to fight with tangled noodles.
